Da Lorenzo: A New Venture in Venice
Da Lorenzo opens in a secret Venetian garden.

On 16 June 2025, Chef Paulo Airaudo opened Da Lorenzo – Al Giardino Segreto within the NH Collection Grand Hotel Palazzo dei Dogi, in the quiet Cannaregio district of Venice. The restaurant takes its name from Lorenzo Patarol, the eighteenth-century botanist whose herbarium is now preserved at Venice’s Museum of Natural History, and overlooks the more than 2,000-square-metre walled garden he created — among the oldest private botanical gardens in the city, with views toward Murano and San Michele.
Seating just eighteen guests, the room is intimate by design. The kitchen offers two seasonal tasting menus, of seven and eleven courses, pairing the Venetian lagoon’s ingredients and traditions with international technique and a distinctly Argentine sensibility. Service runs Tuesday to Saturday, and the garden remains open to the public.
“I am deeply grateful for this unique opportunity and incredibly excited to begin this new venture in a magical city like Venice, in an extraordinary place such as the NH Collection Grand Hotel Palazzo dei Dogi with its magical garden.” — Paulo Airaudo
