At the Four Seasons Hotel Hong Kong, overlooking Victoria Harbour, NOI by Paulo Airaudo has been recognised with two MICHELIN stars. Named for the Italian word for "we", the restaurant is the chef's Asian flagship — a contemporary Italian concept led by Paulo Airaudo with head chef Luigi Troiano.
The kitchen sends out a season-driven tasting menu that evolves through the year, built on a strong seafood foundation with ingredients arriving daily from Japan. Italian tradition remains the anchor, reworked through modern technique and precise, ingredient-led composition, and completed by a considered wine pairing.
