Sartoría by Paulo Airaudo has opened on the 56th floor of The Empire in Sathon, atop the EA Rooftop — the chef's first restaurant in Southeast Asia. The name, Italian for tailoring, frames a dining room inspired by Florence, where modern Italian cooking meets the finest Thai, Japanese and European produce against panoramic views of the Bangkok skyline.

An open-fire kitchen and a live pasta atelier sit at the heart of the room, where seasonal ingredients are handled with precision across a tasting menu and à la carte. The restaurant is now listed in the MICHELIN Guide Bangkok.
